Ingredients
- 2 Tbsp poppy seeds
- 2/3 C unsweetened applesauce
- 2 Tbsp honey
- 1 tsp baking soda
- 1 tsp baking powder
- 6 eggs
- 2/3 C unsweetened almond milk
- 2 tsp lemon zest
- 1/3 C lemon juice
- 1 C tapioca flour
- 1 C coconut flour
- ¼ tsp sea salt
- 1 tsp vanilla extract
Directions
- Preheat oven to 350°
- Mix dry ingredients in a bowl until well combined
- In a separate bowl mix wet ingredients and fold into the dry
- Pour the batter into greased and lined muffin tins and bake for 25 minutes
- Let cool and serve! They taste great with grass fed butter on them!
