Pumpkin Pancakes

Ingredients:
1 cup canned pumpkin puree
1 cup milk
1 egg
2 teaspoons vegetable oil
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
Instructions:
In a large mixing bowl, whisk together canned pumpkin, milk, egg, oil and vanilla extract. Add the flour, baking soda, salt and pumpkin spice to the liquid ingredients and stir until mixed. Grease a frying pan with cooking spray or butter and preheat the pan over medium-low heat. Use about ⅓ cup of batter per pancake and cook each pancake for two minutes per side.
Grilled Bacon-Wrapped Apple Skewers

Ingredients:
4 large apples, cut into chunks
1 pound bacon
Instructions:
Cut the bacon in half lengthwise and then wrap each apple chunk with a piece of bacon. Continue until all apple chunks and bacon slices are used. Fit several pieces onto a skewer and place on the grill until bacon has completely browned.
