Chicken Bacon Ranch Skewers (Serves 4)

Ingredients
- Chicken Skewers
- 4 pounds chicken thighs, thinly sliced
- 1.5 pounds bacon, sliced
- ½ cup Cowboy Butter Rub seasoning or similar butter seasoning containing garlic, herbs, paprika and cayenne pepper
- Buffalo Sauce (as needed)
- BBQ Skewers

Ranch Dressing
2.5 Tablespoons sour cream
- 2 Tablespoons mayonnaise
- 1.5 Tablespoons chopped parsley
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Buttermilk – to reach consistency of Ranch dressing
- Salt and pepper to taste
Instructions:
Pound the chicken thighs until about ⅛” thick. Cover cooking sheet with foil and create a layer of chicken with a layer of bacon on top to cover and continue until all chicken and bacon is used and you have created a layered meat stack. Wrap tightly with foil and freeze for at least 2 hours. Heat grill to 325 degrees, remove meat from freezer, and remove foil. Slice meat into 2×2” cubes and place on skewers. Rub all meat with Cowboy Butter Rub. Grill each skewer for about 15-20 minutes, turning once and basting with Buffalo sauce as desired with turn. Cook until the internal chicken temperature is equal to 165 degrees. Serve with Ranch dipping sauce and enjoy!
