
Grilled Peaches with Honey Bourbon Cream (makes 2 servings)

Ingredients
2 ripe peaches
4 tablespoons honey
1 tablespoon bourbon
8 ounces mascarpone cheese
Instructions
Cut the peaches in half and remove the pit. Grill the peaches, cut side down, over a small fire for about 10 minutes. While the peaches are cooking, mix the honey, bourbon and cheese in a small bowl. Use a spatula to remove the peaches from the fire into serving bowls. Scoop a generous spoonful of honey/bourbon/cheese mixture over each peach. Serve and enjoy!

Easy Campfire Pizza

Ingredients
1 tube refrigerated pizza dough
1 large jar pizza sauce
Topping of your choice – pepperoni, mushrooms, peppers, pineapple (whatever the group likes)
2 cups shredded mozzarella cheese
Instructions
Oil a cast iron pan or pizza stone. Take the dough and spread into the pan. Place the pan on the fire or barbeque. Cook until the bottom has browned (about six minutes). Remove the pan from the fire and flip the crust in the pan. Brush the top of the crust with your pizza sauces and then add your toppings and cover with generously sprinkled cheese. Return pan to heat source and cook until crust is done on bottom and cheese is melted (about six minutes.)
