Fun with Foil Packets

Who knew foil packets could be such an easy and delicious camping option when it comes to mealtime. Check out these great foil packet recipes that will give you a delicious dinner and dessert ala the foil packet route.

Honey Mustard Chicken Foil Packets – Serves 4

Ingredients

1 ½ pounds chicken breast tenders, cut into bite-sized pieces

1 ½ pounds baby potatoes, cut into bite-sized pieces

⅓ cup honey

3 tablespoons Dijon mustard

1 teaspoon yellow mustard

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Heavy-duty foil

Instructions

In a small bowl, whisk together honey, Dijon mustard and yellow mustard until well combined. In a second blow, whisk together the salt, pepper, Italian season, garlic powder and onion powder. Preheat grill to medium-high heat. Pull off 4 sheets of foil, each about 12- inches long and spray each with non-stick cooking spray. Layer the potatoes and chicken evenly in the center of the foil packets. Season the potatoes and chicken with spice mixture and drizzle evenly with the honey mustard mix. Fold the sides of the foil over the chicken and seal closed. Baked on grill for 20-24 minutes or until chicken reaches an internal temperature of 165 degrees.

Campfire Cones

Ingredients

Heavy-duty foil

Waffle cones

Mini marshmallows

Mini chocolate chips

Graham crackers – in pieces

Other toppings could include M&M candies, Rolo candies, mini peanut butter cups, bananas, strawberries, coconut, butterscotch chips, and nuts

Instructions

Fill waffle cones with marshmallows and desired toppings and wrap in foil. Toss in the campfire coals for 5-7 minutes or on low grill until everything is melted in cone. Enjoy!
