Ingredients
- 1 14 oz can of coconut milk
- 1 C unsweetened almond milk
- 3 Tbsp chia seeds
- ¼ tsp vanilla extract
- 8 Tbsp unsalted peanut butter
- 2 C strawberries, diced
Directions
- in a large bowl with a lid, mix the coconut milk, almond milk, chia seeds and vanilla extract until well combined
- place in the refrigerator for 4-8 hours to allow the chia seeds to expand
- once the mixture has become thick like a pudding remove
- in a small jar, layer the pudding, 1 Tbs of peanut butter and ¼ C strawberries, & repeat until desired layering of parfait is reached
- Enjoy immediately or store in the fridge for a quick grab & go treat!
