Ingredients

  • 1 banana
  • ½ C coconut flour
  • 4 eggs
  • 1/3 C
  • 1 C spinach
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1 Tbsp grass-fed butter + more for greasing the pan

Directions

  1. Place all the ingredients minus the butter into a food processor and puree until a smooth batter forms
  2. Place a pan on low heat and melt enough butter to lightly grease the pan so that pancakes do not stick
  3. With a ¼ measuring cup, scoop out batter and place on pan (fits about 2 pancakes)
  4. Flip once golden brown
  5. Top with 1 Tbsp of grass-fed butter and maple syrup!
