Ingredients
- 1 banana
- ½ C coconut flour
- 4 eggs
- 1/3 C
- 1 C spinach
- ½ tsp baking soda
- ½ tsp baking powder
- 1 tsp vanilla extract
- 1 Tbsp grass-fed butter + more for greasing the pan
Directions
- Place all the ingredients minus the butter into a food processor and puree until a smooth batter forms
- Place a pan on low heat and melt enough butter to lightly grease the pan so that pancakes do not stick
- With a ¼ measuring cup, scoop out batter and place on pan (fits about 2 pancakes)
- Flip once golden brown
- Top with 1 Tbsp of grass-fed butter and maple syrup!
