Campfire Mexican Street Corn (Elote)
July is corn month! The old song lyrics say that corn crops should be “as high as an elephant’s eye” this month, which means corn is in abundance and should be on your camping menus!

Ingredients:
4 ears of corn
½ cup of mayonnaise
Juice of ½ lime
1 teaspoon chili powder
½ teaspoon sal
½ cup crumbled Cotija cheese
Cilantro, chopped,, if desired
Instructions:
Prep the corn by removing husks and silk. Do not discard husks but rather place cleaned corn back into husks. In a bowl, mix the mayonnaise, lime juice, chili powder and salt. Place the corn over your grate on your campfire or your camp grill, turning frequently until corn appears charred in several spots, about 10-154 minutes. Remove corn from the grill and let it cool. Remove husks and slather mayonnaise mix over corn. Sprinkle with Cotija cheese and cilantro. Enjoy!
