If Granny Summer is all the rage, then why not follow the trend when it comes to campside dining? Modern camping amenities have really come a long way, and of course, the RV kitchen and slide-outs make cooking an easy job. But let’s take it back this month and cook like grandma (and of course, grandpa) did:
Mulligan Stew (serves 4)

Ingredients
2 tablespoons vegetable oil
1 onion, diced
1 pound ground beef
8 ounces sliced bacon, separated and quartered
2 packets brown gravy mix
2 15-ounce cans whole corn, undrained
2 15-ounce cans kidney beans, drained and rinsed’
2 15-ounce cans sliced potatoes, drained and sliced
Cooking oil (to saute onions and brown bacon and beef)
Worcestershire sauce to taste
Instructions
In a large soup pot, heat cooking oil and sauté the onions until tender. Add the ground beef and bacon and cook until the meat is browned and bacon is beginning to crisp up. Add the gravy mix, corn with liquid, kidney beans, and potatoes. Add water to cover. Simmer until heated through. Season with Worcestershire sauce to taste. Serve and enjoy.
S’mores
The original recipe for the classic s’more is said to have appeared in the 1927 Girl Scout guidebook, Tramping and Trailing with the Girls. It resembled the recipe below, only they were called “Some More” – not much has changed and they are still delicious!
Ingredients
2 graham crackers
1 toasted marshmallow
½ of a plain chocolate bar
Instructions
Toast the marshmallow on a stick over a campfire until it is gooey and golden-brown. Sandwich the roasted marshmallow and the piece of chocolate between the two graham crackers and eat it warm.
