A Healthy and Easy Campfire Salmon Dinner

If 2026 is the year you revamp your eating habits, you should know that sweet potatoes and salmon are the way to go. Salmon provides much needed omega-3 benefits while sweet potatoes provide all kinds of good stuff like beta-carotene, fiber, and antioxidants. Here is a great campfire dinner that serves up both!

Salmon and Sweet Potato Foil Packets (Serves 4)

If cooking over a campfire, make sure the fire has died down and you have several burning coals to cook on. If using a camp stove, preheat to 400 degrees Fahrenheit. Mix sour cream, milk, mayonnaise and whole grain mustard in a bowl and set aside. Wash and peel sweet potatoes and cut into ¼ inch slices. Cut foil large enough to cover salmon and potatoes and make a double layer for each sheet. On top of each piece of foil, arrange potatoes, overlapping slightly. Season potatoes with salt and spoon 4 tablespoons of the sour cream mix over potatoes. Fold the foil into a packet and close it. Place on top of the coals and cook for 20 minutes. If using the oven, cook for 20 minutes. Carefully remove the packet from the fire/oven and open it. Place salmon atop potatoes and season lightly with salt and remaining sour cream mix. Close and return to heat for approximately 10 minutes. Serve with lemon and dill.
