What is the connection between spring and carrots? It may have something to do with the harvest time and of course, with the arrival of all those spring bunnies but whichever reason, we just like these recipes. One for make-ahead and one for campsite dining!
Honey Roasted Carrots (serves 3-4)

Ingredients
1 pound whole carrots
2 tablespoons butter
2 tablespoons honey
Coarse sea salt and pepper
Instructions
Preheat outdoor grill to 400 degrees. Add 1 tablespoon of butter to a cast iron skill. Add the carrots and bake for about 15 minutes, or until carrots soften. Remove from heat and cover in honey and then add the remaining butter and return to heat for 5 minutes. Add salt and pepper to taste.
Carrot Cookies

Ingredients
¾ cup melted butter
¾ cup light brown sugar
¾ cup white sugar
1 large egg
1 cup shredded carrots
¼ cup water
2 tablespoons grated orange zest
2 cups rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon nutmeg
½ teaspoon cinnamon
Instructions
Preheat oven to 375 degrees. Grease baking sheets. Beat together melted butter, brown sugar, white sugar and egg with electric mixer for 1 minute. Add carrots, water and orange zest and mix until fully blended. Add oats, flour, baking soda, salt, nutmeg and cinnamon for one more minute. Drop by rounded teaspoonfuls, about 2 inches apart, onto baking sheets and bake for about 8-10 minutes until golden brown.
