Celebrate National Potato Day with these Tasty Recipes

Whatever way you pronounce the word, this tasty little tuber cooks up to hearty deliciousness. Recognize National Potato Day (August 19) with these spud-based recipes.

Loaded Campfire Potatoes (Serves 4)

Ingredients

6 white potatoes, sliced ¼ inch thick

½ cup shredded cheddar cheese

2 tablespoons bacon bits

2 tablespoons green onion, diced

2 teaspoons butter

Salt & Pepper

Sour Cream (optional)

Instructions

Place all ingredients in a large piece of tinfoil. Wrap securely with overwrap of foil and place onto the cooking surface. Cook for 45 minutes over medium heat. Open packet, sprinkle with salt and pepper to taste. Add sour cream if desired.

Pie Iron Tater Tots (Serves 6)

Ingredients

1 32 ounce bag of frozen tater tots

1 stick prepared garlic butter (or use 1 stick of unsalted butter and ½ teaspoon garlic powder)

4 tablespoons grated parmesan

4 pinches Kosher salt

Instructions

Melt butter in a skillet. In a bowl, gently coat the tater tots with the melted butter and season well with salt. Spray the pie iron with cooking spray and load with buttered tater tots. Place the pie iron over the fire, either on grill grate or in between hot coals. Cook 15-20 minutes, flipping often until tots are crispy outside and soft inside. Transfer to plate and sprinkle with parmesan cheese. Repeat until all tots are cooked.
