The summer solstice on June 21 is the official start to summer and that means plenty of fresh fruits and vegetables are sprouting in home and travel gardens as well as showing in abundance at local farmer’s markets. Here are a few fresh recipes to make for your Summer Solstice Celebration.
Heirloom Tomato and Herb Salad (serves 6)

Ingredients
2 pounds heirloom tomatoes, cut into assorted slices and wedges
1 pint multi-colored cherry tomatoes, halved
½ cup extra-virgin olive oil
¼ cup red wine vinegar
3 smashed medium garlic cloves
1 ½ teaspoons kosher salad
½ teaspoon black pepper
Fresh herbs like basic, chives and flat-leaf parsley
Instructions
Place heirloom and multicolored cherry tomatoes in a large bowl. Add extra-virgin olive oil, red wine vinegar, garlic cloves, salt, and black pepper; gently stir to coat. Let stand 10 minutes. Stir in torn mixed fresh herbs. Serve immediately.
Campfire Peaches (serves 6)

Ingredients
3 fresh peaches
¼ cup brown sugar
1.5 to 2 tablespoons butter
Heavy Duty Foil
Instructions
- Before leaving for your camping trip, place brown sugar and butter in a Ziplock bag. Store in the refrigerator or cooler until ready to use. Blend together with fingers in the bag right before use.
- Spread 4 large pieces of heavy-duty foil on the picnic table or counter.
- Slice peaches in half and remove the pit.
- Place peach onto the foil. Pour 1/4th of the butter/sugar mixture onto the middle of the peach. Place peach back together and wrap tightly with foil. Repeat for the rest of the peaches.
- Place into hot coals in the campfire. Let cook about 15 minutes or until the peaches are softened. Take care opening foil as steam will escape.
