Cheers to our Beer-Infused Recipes

If it’s the day before National Beer Day, which is celebrated annually in the United States on April 7, then you will find yourself celebrating New Beer’s Eve. National Beer Day was the result of President Franklin Roosevelt signing the Cullen-Harrison Act in March 1933, which made the sale of beer legal, effective April 7, 1933. Mind you, this was during Prohibition so when April 7 rolled around, people were more than happy to hoist a schooner or two of suds. We’ve got some fun recipes that include beer in the mix so you can celebrate National Beer Day, starting with breakfast!

Beer Pancakes (Serves 3)

Ingredients

2 cups all-purpose flour

2 tablespoons sugar

4 teaspoons baking powder

1 teaspoon salt

1 12-ounce can of beer (mild lagers work best)

¼ cup canola oil

Instructions

Place dry ingredients in a medium-sized bowl; mix in beer and canola oil. Heat a lightly greased skilled over medium flame. To make one pancake, spoon three tablespoons of batter onto skillet and cook two to three minutes per side, until browned. Serve with butter and maple syrup.

Beer Glazed Cajun Vegetables

Beer Glazed Cajun Vegetables (Serves 6)

Ingredients

1 red bell pepper

½ red onion

3 small yellow potatoes

2 cloves garlic

2 ears of corn (broken in half) or 1 cup of frozen corn

6 white button mushrooms

1 cup green beans

½ to 1 can of beer (IPA or Lager work well)

1 tablespoon Cajun seasoning

2 teaspoons smoked paprika

1 teaspoon salt

Instructions

Roughly chop all vegetables. Add chopped veggies to a cast iron pan with heavy, tight-fitting lid. Add beer and seasonings. Place cast iron pan directly onto fire that has been stoked for at least 30 minutes (should be hot coals with low flame). Cook for 20 minutes. Add more beer if you notice veggies are sticking to bottom of pan.
