Cooking Light with your Dutch Oven

Maybe you want to shed a few pounds or maybe you simply want to eat healthier. Here is a recipe for the trusty Dutch oven that will keep you sticking to your resolutions to eat healthy while camping.

Ginger Broccoli Soup (serves 4-6)

Ingredients:

2 tablespoons ghee

3 tablespoons grated fresh ginger

2 medium heads broccoli, about 1 pound, chopped

1 bunch kale, trimmed of tough stems and cut into ribbons

2 quarts low sodium vegetable broth

Optional Garnish: pickled ginger, sesame seeds

Instructions:

  1. Melt the ghee over medium-high heat in a large Dutch oven. Add the ginger and cook until fragrant, about 1 minute.
  2. Add the broccoli, kale, and vegetable broth, and bring to a boil.
  3. Reduce the heat to maintain a simmer. Cover, and cook until the broccoli is tender about 25 to 30 minutes.
  4. Remove from the heat and purée with an immersion blender until smooth, about 5 minutes. Serve immediately.
