Barking up the Right Tree

Bark candy is kind of like one stop shopping when it comes to treats. The perfect mix of whatever you like all contained in one bite, and one bark! We’ve got some great bark recipes you can make ahead of time before you roll out on your next camping adventure, so a sweet little treat is a simple as breaking off a piece or two.

Peppermint Bark (makes 12 servings)

12 ounces semi-sweet chocolate, chopped

12 ounces white chocolate, chopped

½ teaspoon peppermint extract

8 candy canes, crushed


  1. Line a baking sheet with parchment paper. Fill the bottom of a large pot with three inches of water and bring to simmer over medium heat. Reduce heat to low, then place a large heatproof bowl on top. Add semi-sweet chocolate and stir occasionally until chocolate has melted. Stir in extract. Pour into a prepared baking sheet and spread into an even layer with an offset spatula. Refrigerate until set, about 20 minutes.
  1. Over the same pot of barely simmering water, place another large heatproof bowl. Add white chocolate and stir until melted. Pour over set semi-sweet chocolate then top immediately with candy canes. Refrigerate until set, about 20 minutes. 

Unicorn Bark (makes 16 servings)

1 pound white candy coating

4 to 6 ounces candy coating (4 to 6 colors at 1-ounce each)

1 package rainbow sprinkles, for garnish

1 package candy pearls, for garnish


  1. Cover a baking sheet with waxed paper or aluminum foil. 
  2. Melt the white and colored candy coating separately in the microwave, each in individual bowls. Heat and stir until every color is smooth and fluid.
  3. Pour the white coating out onto the baking sheet and smooth it into an even layer about 1/4-inch thick.
  4. Working quickly, drizzle the other colors of candy coating over the white coating in a random pattern. Drag a toothpick or knife through the bark to create pretty swirls.
  5. While the coating is still wet, add rainbow sprinkles and candy pearls on top. Refrigerate the tray to set the bark for at least 25 minutes.
  6. Once set, break or cut the bark into pieces.  

Cheesecake Bark (makes 6-8 servings)

6 ounces cream cheese, softened

2 1/2 cups 2% or full fat Greek yogurt

1/4 cup honey

1 teaspoon pure vanilla extract

Pinch kosher salt

1/2 cup raspberries

1/3 cup sliced strawberries

1/4 cup blueberries

1/4 cup crushed graham crackers


  1. Line a medium baking sheet with parchment paper. In a large bowl using a hand mixer, beat cream cheese until light and fluffy. Add in yogurt, honey, vanilla, and salt and beat again until smooth.
  2. Pour mixture onto prepared baking sheet and smooth until bark is about 1/2” thick. Sprinkle fruit and graham crackers onto bark and place into the freezer to harden, 4 to 6 hours.
  3. Break into pieces or cut into squares and serve.
