Ingredients:
- 1 watermelon, cut and sliced into cubes (seeds removed)
- 1 Tbsp fresh basil
- 2 Tbsp fresh lime juice (about ½ lime)
- 2 Tbsp honey
- 1 Tbsp olive oil
- optional: sprinkle of crumbled feta cheese
Directions:
- Slice the watermelon into cubes and place in a food processor or blender
- Add in basil, lime, and honey and puree until liquid and consistency of soup
- Pour the soup into a bowl and drizzle with olive oil and a sprinkle of feta cheese
