Ingredients:
- 1 large zucchini, chopped
- 2 roma tomatoes, diced
- 2 red bell peppers, chopped
- 1 large cucumber, chopped
- 1 C tabbouleh (optional)
- 2 Tbsp rice vinegar
- 2 Tbsp olive oil
Directions:
- Chop the veggies and place into a large mixing bowl
- Mix until well combined and add in the rice vinegar and olive oil until evenly distributed
- Tastes best if you refrigerate it overnight to let the flavors soak in!
